Extruder thermistor issue, new to this and could use some guidance/advice.

Hello all. So I just got my 3d printer in the mail last weekend and assembly and function testing went great. Right up until I noticed a MINTEMP error. Pulled what i assume is the heating element out of the head and found some wires clustered behind it which I assume are/is the head’s temperature sensor.When I poke around the interwebs I see thermistors and how to replace them but they look like a self contained device not 2 separate wires with plastic tubes over them.
